A plush, but not too plush weekday white, like the perfect worn in wool booties that hug your arches just so. Lyrarakis winery is located in Heraklion, Crete, and is one of the oldest on the island. Lyrarakis family started working in the wine sector in 1966 and since then they have managed to save several local varieties such as Dafni, Melissaki, and Plyto. The iconic winery has shown immense mastery in highlighting the local treasures of the island. Voila comes from Assyrtiko that grows in a dry vineyard in the plain of the same name "Voila", at an altitude of 580 meters. The grape is pressed and remains with the stems at low temperatures for 16 hours to enhance the aromas. It then slowly ferments in stainless steel tanks for a full 15 days. After the fermentation is complete, it remains in contact with the lees to increase its volume. The above add up to a rich and at the same time very refreshing effect.

You can drink it now, but in 6 years it will be amazing!
