Dafni Psarades - 2022

Have you heard of Dafni variety before? Probably not, as this is the only example you can find. A Cretan variety rescued by Lyrarakis family back in the 90s, and thank God as this has some amazingly unique aromas. Full of wild herbs and laurels. If you keep it 2-3 years, it will unfold its botanical temperament even more.

Pair it with slow cooked rabbit with rosemary, fennel fritters, steamed mussels, or lamb with herbs in the oven.
