Crisp, like waking up before the sun to a cool, dewy darkness & smelling the summer through it. Dry & refreshing with white satin on the palate, pure undiluted hyper-saturated citrus fruit with a little dab of tropical flower perfume behind your ears. Gorgeous with oysters, any light shellfish dish or sunlit, poolside stargaze. But don't be fooled, this is not your typical Xynisteri. Textural, mineral, and so worthy to age. Drink it now, but keep some bottles hidden for the years to come.
