This almost transcendentally elegant and spontaneous natural wine from Bourgogne rising star vigneron Sylvain Pataille, is a textbook demonstration of what love for terroir, inspiration and low-intervention winemaking genius can achieve. Hailing from vineyards gently sloping hills near Marsannay, characterised by clay-limestone soils, this is 100% Aligote, considered the “minor” Bourgogne white variety but capable of great feats when handled properly. Vineyard work is organic and biodynamic and vinification is fully natural, with wild fermentations, no fining or filtration. Terse and kaleidoscopic and brightly vibrant: grapefruit zest with cedar citrus, apricot, ginger and wild herbs.
