After wandering for a long time, searching for her own style of winemaking, Chloe Chatzivariti returned from France in 2016 bringing with her all the love and know-how she gathered from her travels all these years, focusing on natural and biodynamic winemaking. Low intervention is her mantra and she allows nature to show her the way each year, having always in mind to showcase in the best possible way each grape variety and its character as expressed in Goumenissa.
Spin is a medium bodied red wine. Full of aromas of rose petals, violets, wild herbs and red berry compote. The wine is delicious. Really concentrated yet incredibly refreshing – the mark of a great red. It is a blend between two different harvest dates of Negoska grapes- one early and one late. Grapes are harvested carefully, hand selected and crushed before being allowed to go through spontaneous fermentation in stainless steel tanks, without additives, fining or filtration and with very low sulphur content. Brilliant with richer fish dishes, chicken or pork belly.
