The Sea, Sex and Sun cuvée from Domaine AMI comes from an altitude vineyard in the Pyrenees that Paul's cousin cultivates organically. The Macabeu macerates on the skins for three weeks while the Grenache Blanc is aged in the classic Burgundian style and matures for a year in old wooden barrels. The nose of this wine reveals delicious notes of ripe and juicy peaches, orange zest, white flowers, gunflint with a hint of sweet spices. The mouth is ample and fresh thanks to a very nice balance between fat and roundness of the fruit, mineral tension and fine tannins brought by the maceration.
