This super-limited release is made from 30-year-old bush vines in western Samos and crafted with serious love and geeky precision. The 2023 base wine fermented with native yeasts, aged 6 months in stainless steel, then 6 more in used French oak. Just when you thought it was done — boom — they hit it with fresh fermenting must from the 2024 harvest and bottled it to kick off a second fermentation.
The result? A pale, punchy sparkler with a bold nose and a razor-sharp personality. Think flinty minerality, bright clementine zest, and enough electricity to light up a room.
